2 Scoops Dairy Free Coconut Milk Ice Cream

1-2 Shots Instant Decaf Espresso

Grated Dark Chocoloate

Sliced Almonds

Place scoops of ice cream in coffee cup. Pour hot espresso over the ice cream. Grate dark chocolate over the top and sprinkle with sliced almonds. Garnish with a solid piece of dark chocolate.

Granola Bark


I added my very good for you breakfast granola to very good for you 70% fair trade organic dark chocolate. It makes for a quite tasty dessert.

There have actually been clinical trials done on how good dark chocolate is for you. Can you imagine? I would have signed up for that one in a heart beat! It seems that dark chocolate is VERY good for you…but, they really didn’t have to prove that to the female population, now did they?

Dark chocolate is packed with flavonoids. Heart healthy flavonoids. Specifically something called epicatechin. It’s an active member of a group of compounds that make up plant flavonoids. According to an article on WebMd, flavonoids keep cholesterol¬†from gathering in blood vessels, reduce the risk of blood clots, and slow down the immune responses that lead to clogged arteries. Epicatechin triggers the release of active substances that increase blood flow in the artery. Better blood flow is good for your heart. It’s been studied, it’s been proven, and that’s pretty much all the evidence I need to indulge in dark chocolate.

If you add dried cherries, dried blueberries, gluten-free oats sweetened slightly with agave, pine nuts, and slivered almonds to it…it only makes it better! (In my mind anyway…) You can look HERE¬†for all of the health benefits in the granola.

So, with that said, indulge! But just a little. All you need is a little over 1 oz per day to keep your blood flowing happily through your arteries.

Granola Bark

2 – 3 oz. Dairy Free Chocolate Bars


Line a small baking sheet with parchment paper. Melt the chocolate bars in a double broiler or in a bowl over a hot pan of water. Spread chocolate in a thin layer onto the parchment paper (about 12″ long by 6″ wide or so). Sprinkle with granola. Place in a cool area to set up. Break up into chunks to eat.
