Most newbies who find out they have food allergies or sensitivities are completely freaked out. They’re so accustomed to eating a certain way and feeding their families a certain way that they become instantly overwhelmed with even the thought of changing their eating habits let alone the habits of their picky family members.

They cannot fathom following an allergen free diet and going from fast food and packaged foods to a whole foods, allergen free, diet. Even if it means feeling better!

Truth be told, we all have that battle until we realize what’s at stake. If we continue eating things that don’t agree with us, the issues build and build until we’re faced with more severe illness issues like autoimmune disease, obesity, ulcers, migraines, hormone imbalances, mood disorders, sleep disorders, and more.

One of my inadvertent jobs while working in a naturopathic clinic years ago was to talk people off the cliff after they were told what they could no longer eat.

Like a deer in the headlights they were stunned. They didn’t know where to begin, they were worried about the time and effort it would take, didn’t think they could do it, thought they would starve, and the grumpier more feisty ones thought they’d never be able to eat anything “fun” again.

I often reminded them that they were at the doctor’s office because their life was anything but “fun”. Most of them had severe health issues. We find comfort in repetition even if it’s not good for us. Changing the patterns of how we eat and how we treat our bodies can be very stressful at first but it goes away quickly and the pay off is HUGE.

Once the allergens are removed and the body has a chance to begin to heal instead of spending all of its energy on battling gut issues, histamine issues, and inflammation, people are amazed because they had forgotten what GOOD feels like. We get used to a certain level of “sick” and that becomes life. When we remove the things that are holding us back and we go up to the next level and then the next and so on, to where we are eventually feeling well, then the effort to maintain an allergen free healthier lifestyle, pays off and reminds us that it is indeed worth “it”.

I blog because I like to prove that changing your diet IS worth it, that YOU and your health are worth a little extra research and time, and also to dispel the myths that living an allergen free life is too limiting and not enjoyable.

Grain Free Chocolate Cake with Dairy Free Fudge Frosting

*This recipe is adapted from Satisfying Eats

Preheat oven to 350°

1 Cup of  Coconut Flour

3/4 Cup of  Unsweetened Cocoa Powder

1 1/2 Cups of Coconut Sugar

2 teaspoons of Double Acting Baking Powder

2 teaspoons of Baking Soda

1/8 teaspoon of Sea Salt

8  Eggs

1/2 Cup of Earth Balance Soy Free Dairy Free Butter

3 Tablespoons of Pure Vanilla Extract

1 Cup + 1/2 Cup of Organic Full Fat Coconut Milk

1/2 Cup of Strong Brewed Decaf Coffee

1/4 Cup of Dairy Free Chocolate Chips or Chopped Dairy Free Dark Chocolate

About 8-10 Oz of Smucker’s Simply Fruit Raspberry Jelly for filling

Add the dry ingredients to a mixing bowl and whisk together. Add the eggs, butter, vanilla, coffee, and 1 Cup of the coconut milk. Mix on medium to blend well, scraping down sides. Let the batter rest while you’re getting the cake pans ready (Spray and line with parchment paper). Add the 1/2 Cup of coconut milk and mix on medium just until combined.

Pour evenly into two 8-9 inch cake rounds, two 8×8 square baking pans, or two 12 hole cupcake pans. If you’re going to make cupcakes, be sure to spray the paper liners.

Bake for 22-28 minutes. (I use convection, conventional ovens may vary.) Cool completely in the pan before removing.

Chocolate Fudge Frosting

3/4 Cup Earth Balance Soy Free Dairy Free Butter

3 1/2 Cups Powdered Sugar (You can also use homemade coconut sugar powdered sugar, but it will be a heavier, more moist, consistency)

1/2 Cup Cocoa Powder

1/2 teaspoon Kosher Salt

1 1/2 teaspoons Pure Almond Extract

3-4 Tablespoons of Full Fat Coconut Milk

About 1 1/2 teaspoons Instant Decaf Espresso

Pour the coconut milk in a measuring cup and add the instant espresso granules, stir to combine. Set aside and allow the espresso to dissolve.

Cream the butter in a mixer until it is light and fluffy, scraping down sides once or twice. Add the powdered sugar, cocoa powder, salt, and almond extract. Mix on lowest setting (so you don’t end up with a cloud of powdered sugar and cocoa powder over your whole kitchen) until mixture starts to come together.

 With the mixture on medium, SLOWLY add the coconut milk coffee mixture, 1 Tablespoon at a time (keeping an eye on the consistency…not too soft!) scraping down the bowl once or twice in between. I like a thick, rich, frosting…if you want that too, you may not need all of the milk. Once the coconut milk has been added, beat on medium for 3 minutes until it expands and becomes fluffy.

Grain Free Pumpkin Pecan Coffee Cake

I know, I know. It’s a little early for all things pumpkin. For most people it’s like cilantro, they either hate all the Fall flavored stuff or love it. I’m obviously in the last category. Even though our days are still in the 80’s and 90’s, our mornings are much cooler now and typically in the low 50’s. Perfect for coffee cake and a nice cup of tea or coffee. I’m so tired…of eggs, or smoothies, or dinner leftovers for breakfast. In fact, a few times over the last couple weeks I’ve settled with just a miserable little apple until lunch because I was feeling so uninspired about my breakfast plan. I’ve changed my mind set though, and now I’m focusing on switching it up a bit and adding a little more excitement.

I’m taking the coolest three week class called, “Love Your Body” through a therapist I know. She’s a Body Image Recovery Coach, and the Founder of MindSexBody Decide To Be Healthy. She studied Executive And Professional Coaching at the University of Texas at Dallas, and is currently studying Human Sexuality at Widener University…and she is full of all kinds of information pertaining to the history of body shape, objectification, and the space where fact and fiction collide where society has completely lost their minds about what healthy looks like. I have learned so much!

One of the tools we’re working with this week is intuitive eating and exercise. Intuitive eating is truly thinking about what your body needs for energy, nutrients, and satisfaction, rather than suffering through meals that are not fulfilling your personal needs. When we’re just going through the motions (or emotions) with our meals, we end up eating fast, bored to death, not being mindful, and end up unsatisfied. That leads to unhealthy food choices and over stuffing because we keep looking for that “something” we’re craving but we aren’t truly paying proper attention to it. It’s healthier to stop and really think about what your body needs at that time. Does it need healthy fats, crunchy, sweet, savory, protein, fruit, vegetables, carbohydrates?  When choosing to be more mindful about what we really need and what we’re eating to fulfill those needs, we naturally transform to the size and shape our body is comfortable and happy with. The same goes for intuitive exercise.

Examining what type of exercise is the best fit for you personally that is fun, rewarding, and makes you look forward to doing it, makes all the difference. Life is too short to be doing squats if you hate them with a passion. Look for exercises that fit where you are in life. Can you slip in a few walks here and there? Maybe a hike once a week? Or maybe you’re a runner, or a CrossFit enthusiast or a swimmer. For me at this stage in my life and with my individual health concerns, I have found that Pilates and an old Jane Fonda Fat Burners workout works well for me a couple times a week. I also do some serious stretching every morning, sometimes yoga, and we also get some exercise by walking with the dogs. When Fall hits and the weather cools down, I’ll begin hiking again as well. Not because I feel like I HAVE to but because I love it and my body and mind feel better with it, than without.  Whatever it is, find what you love, and you’ll be much more apt to look forward to adding healthy, stress reducing, exercise into your weekly routine.

Pumpkin Pecan Coffee Cake

Preheat oven to 350 degrees. 12 Servings.

1/4 Cup of Arrowroot

1/2 Cup of Sweet Potato Flour

3/4 Cup of Coconut Flour, sifted

2 teaspoons of Double Acting Baking Powder

1 teaspoon of Baking Soda

1/4 teaspoon of Sea Salt

1 teaspoon of Pumpkin Pie Spice

3 Tablespoons of Dairy Free Butter, cold

3 Eggs

1 Cup of Canned Pumpkin

1 teaspoon of Pure Vanilla Extract

1/4 Cup of Pure Maple Syrup

For the Crumb Topping:

1/4 Cup of Coconut Flour, unsifted

2 Tablespoons of Sweet Potato Flour

1 Tablespoon of Arrowroot

4 Tablespoons of Coconut Sugar

1 teaspoon of Ground Cinnamon

6 Tablespoons of Dairy Free Butter, cold

1/4 Cup of Chopped Pecans

Measure the 3/4 cup coconut flour, 1/2 cup sweet potato flour, 1/4 cup arrowroot, baking powder, baking soda, sea salt, and pumpkin pie spice into a large bowl. Cut in the 3 Tablespoons of cold butter. Add the pumpkin, vanilla, and maple syrup and whisk to combine.

Spray an 9×9 inch baking dish with non stick spray and spread the batter. Set aside.

For the crumb topping: Measure the 1/4 Cup coconut flour, 2 Tablespoons of sweet potato flour, 1 Tablespoon of arowroot, coconut sugar, cinnamon, sea salt, and pecans into a medium bowl. Cut in the 6 Tablespoons of cold butter and sprinkle over the top of the batter.

Bake for 27 minutes. Serve warm or room temperature. I like mine warm with a little pat of dairy free butter!

Did I ever tell you about the time years and years ago when our young neighbor down the street was having an affair? You’d be surprised what you’re privy to when you keep your eyes open.

We didn’t know her at all, but when you’re an observant person…you see things other average Joes, just don’t see.  Hubby deployed or some such thing, and pretty soon a shiny new truck and a shiny new young man started coming around. Then he started staying.

Well, my husband has a knack for coming up with nicknames for people. He crowned the shiny young man, “Porn Star”. Along with a tune of “bow chicka wow wow”, every time the shiny young man drove by. Well, Porn Star had his own business and he provided a service we needed. So my husband thought, “What the heck, I’ll throw this guy some business.” Now, I had never seen this guy close up so I had no idea it was actually Porn Star that came to our house to give us an estimate.

While we were talking over plans he made a few comments about the young wife down the street and the neighborhood, but was so vague, I thought he was just a friend of the couple or an employee of Porn Star.

Well, as you can probably guess, I was very curious about how the husband disappeared and the shiny new young man just showed up. It was a mystery we needed solved! So I said a couple of things in a round about way like, “Yeah, we noticed the husband deployed and now some other dude is hanging around. So how’s that panning out with the husband?”

He was silent. Or maybe he mumbled a couple of things, I’ve tried to forget. But I do remember the look my husband gave me. That slight look of horror mixed with a large dose of humorous smirk…because I had stuck my foot in my mouth and he probably couldn’t wait to see how I was going to get it out.  Once the realization hit me…. you know that hot wave you get from your toes all the way up to your head? I had one of those and immediately thought, “Oh CRAP. Well, I’m glad he already gave us our estimate.” And I didn’t say another word. In fact, I think I may have laughed. Because really, what else are you supposed to do at that point?

Our conversation ended very quickly after that and about an hour later the doorbell rang. I peeked out the kitchen window and sure enough, it was Porn Star.

Bow Chica Wow Wow!

And of course, my husband was nowhere to be found. So I opened up the door with a bright cheery smile and he handed me another estimate and said that after our conversation he realized there was “No Way” he would be able to provide the service for what he had originally offered.

He doubled it.

I laughed again, and silently (THIS time) thought, “Hmmm…well isn’t that interesting…” After a good laugh we ended up hiring another guy. “Harley Guy”, who did it for a fraction of Porn Star’s original bid. Deployed Hubby never returned. Not long after that, Porn Star and, “Variety is The Spice of Life” young lady, moved on to another more unsuspecting and less inquisitive neighborhood I guess.

Mystery solved!

Grain & Dairy Free Spice Cakes

*Preheat oven to 350 degrees

1 Cup of Coconut Flour

3/4 Cup of Sweet Potato Flour

1 Cup of Coconut Sugar

2 teaspoons of Double Acting Baking Powder

1/8 teaspoon of Sea Salt

1 Tablespoon of Pumpkin Pie Spice

1/2 Cup of Dairy Free Soy Free Butter

4 Eggs

1 1/2 teaspoons of Pure Almond Extract

1 Cup + 1/2 Cup (measured separately) Full Fat Coconut Milk

Measure the dry ingredients into a stand mixer and whisk to combine. Add the butter, eggs, almond extract, and 1 Cup of the coconut milk. Beat until fully incorporated, scraping down sides once or twice. Allow the batter to rest while you place cupcake liners into a tin (18). Add the remaining 1/2 cup coconut milk and beat until fully incorporated. Fill muffin cups 3/4 full and bake for 20 minutes.

**I made a simple powdered sugar/butter frosting…that ended up being a dance of add more of this and add more of that and then I had to toss it and make another batch. So I will let you figure the measurements for your frosting, or you can go here and use these measurements. I used powdered sugar, dairy free butter, pumpkin pie spice, and a little coconut milk in mine. I also sprinkled them with Maple Sugar Nuggets.
