Coconut Raisin Haystacks

*Makes 24 cookies

Preheat oven to 325 degrees.

1 8oz Bag of Organic Unsweetened Shredded Coconut 

1/3 Cup of Organic Coconut Sugar

3 Tablespoons of Cassava Flour

1/8 teaspoon of Sea Salt

3 Organic Egg Whites plus 1 Whole Egg

1 Tablespoon of Filtered Water

1/2 teaspoon of Pure Almond Extract

1/2 teaspoon of Organic Ground Cinnamon

1/3 Cup of Organic Raisins

2/3 Cups of Enjoy Life Chocolate Chips

1 teaspoon of Organic Unrefined Coconut Oil

Add the shredded coconut to a medium bowl. Add the coconut sugar, cassava flour, salt, egg whites, whole egg, water, cinnamon, almond extract and raisins. Stir thoroughly until the mixture is completely combined and thoroughly moist. 

Using a spoon, form mounds of dough and place on a parchment covered baking sheet. 

Place on the middle rack of your oven and bake for 20 minutes. 

While cookies are baking, melt the chocolate chips and coconut oil to drizzling consistency. 

Remove cookies from oven and allow to cool for 10 minutes. Drizzle with chocolate and enjoy!

  1. If you use mulch, it could be coming from it. If you have one, there are possibly many more. I don’t mean to alarm you.

    • Our house borders 500 acres of hills and grassy farm land. I’m sure that’s where they are coming from. We’re spraying tomorrow. We’ll get it under control. 🙂

  2. Oh April, what a harrowing experience! I’m so glad I live somewhere that hardly has any ticks. I detest the little buggers! I hope you are not too worn out from the ordeal and that you don’t have any more ticks. It must be your worst nightmare. xx

    • It has made me a little itchy and paranoid…but other than that, I’m doing OK. Found another one crawling up the wall next to the slider yesterday. They must be coming in from the yard. Going to spray today! 🙂 Hope you are doing well!

  3. We used to live on Sydney’s northern beaches that are infested with ticks. They’re in everyone’s backyard and the vet practices are full of cats and dogs suffering tick poison. We moved about five years ago to an area where there are no ticks. It’s bliss! I’m sorry you have them inside your house but good on you for spotting them before they sank into your skin! I’ve never seen them until it’s too late. They’re such tiny little buggers. Have a happy Easter xx

  4. What a relief to move to a place where there are no ticks! It was worse when we lived in New Hampshire. Tony would pull 45 ticks off the dogs at a time after a mountain bike ride, it was awful! We’re spraying today, so hopefully they will go elsewhere! Happy Easter! 🙂
