An Amazing Avocado Dressing

Cilantro Lime Avocado Dressing

This recipe is adapted from my mom’s recipe.

2 Ripe Avocados

1 1/2 Cups of Cilantro

Juice of 1 Lime

3 Cloves of Garlic

1/2 Cup of EVOO

2-3 Tablespoons of Apple Cider Vinegar, depending on how tart you like your dressing

1 1/2 teaspoons of Coconut Sugar

1/2 teaspoon of Sea Salt

1/2 Cup (maybe a bit more to thin it out) of Filtered Water

Place all the ingredients in a Nutribullet, blender, or food processor and blend until smooth. You may have to shake and scrape the sides once or twice to get it all incorporated. Serve on anything you like, it’s absolutely delicious!

    • Thank you Charlie, it is certainly a relief. And that dressing….SO GOOD! I dipped Taro chips in it yesterday and ate it with carrot sticks today. Delicious.

  2. Glad that there is a happy? ending of some of the stories that I read. My avocado tree is fruiting and this eecipe would be wonderful for the excess avocados.

  3. Incredible – all of it. I’m so glad Nan has been found and is getting help. I have a dear friend with two schizophrenic daughters, so I know all too well about the panic and long nights of worry. Sending your family – most especially Nan – well wishes!

  5. Was raised by a schizophrenic, brutal father and an enabling mother. GOD help those who cannot or will not help themselves! When you need government intervention, they are nowhere to be found; or worse, found, but refuse to do anything to help prevent harm. I’m so glad it all worked out. Praise GOD, His eye is on the sparrow!
