Grilled Cheese with Spinach, Chicken & Pesto

I’ve been trying to stick to salads for lunch to up my daily veggie intake, but yesterday I had almost an entire vegetable day purely by accident. I love vegetables, but all day? I must have had a lot going on because typically I’m a protein lover.

After walking the dogs late this morning I couldn’t get my mind off of a grilled cheese sandwich. I also had chicken breasts that needed to be grilled and leftover vegan pesto from the sandwiches I made over the weekend. After the dogs got their “you were good on your walk” treat, I rummaged around and also remembered I had organic tomatoes and a nice bunch of organic flat leaf parsley. I’m crazy for parsley. I don’t know why, but I’ve been that way since I was a kid. I used to eat everyone’s parsley off their plate when we went out to dinner.

So, once I realized I had the makings for a delicious sandwich, I shoved the salad I made yesterday to the back of the fridge and told myself I would eat it for dinner instead.

Grilled Cheese with Spinach, Chicken, & Pesto

2 Slices Gluten Free Bread (I used Udi’s Whole Grain)

Slices of Grilled Chicken Breast

Spinach Leaves

Vegan Pesto

Diaya Cheese

Dairy Free Butter

Fresh Tomatoes

Flat Leaf Parsley

Kosher Salt

Freshly Ground Pepper

I’m sure you know how to make a grilled cheese so I will just give the basics. Grill the chicken first, or use leftovers, your preference. Spread pesto on the insides of both pieces of bread. Place the cheese on the bottom piece of bread, closest to the heat. Layer everything else however you like and cook until nice and toasty.

  1. I came here, April, a skeptic. I have my favorite grilled cheese sandwich and thought that none could compare. Well, you converted me. This sounds just too good. Pesto as sandwich spread is an idea whose time has come. Adding spinach and chicken moves this sandwich to another level entirely. And whatever doubts I may have had, your photos certainly erased them . This looks like one great sandwich. “Yummy” is right!

  4. This looks heavenly! Happy to have “met” you because my husband is celiac! I sooooo miss Udi’s bread. We could get it in Houston but now that we are in Dubai I have to make some from a mix and it’s nowhere near as good. 😦

    • Thank you for stopping by! I used to make my own bread but Udi’s makes it so convenient I’ve become quite lazy! Ha!

      We are getting ready to move from Washington State to New Hampshire and I’m already a tad bit panicked about being able to find my favorite gluten-free items. But at least I can order the online! I’m not sure how well Udi’s bread would keep while flying from the US to Dubai! ~April

  5. I love Udi’s bread! It’s the only bread that comes close to a gluten-loaf.. I understand now why a recipe for bread would be the ultimate! Paired with cheese, chicken.. pesto, spinach.. fantastic grilled cheese.. gourmet style! xx

    • I used to make my own GF bread, but I’ve been really lazy lately in the bread area! It’s so easy to just pop into the store and grab a loaf of Udi’s.
