Chocolate Chunk & Dried Cherry Oatmeal Cookies
Chocolate Chunk & Dried Cherry Oatmeal Cookies
*Makes about 20 three-inch cookies
3/4 Cup Dairy Free Butter
1 3/4 Cups Mama’s All Purpose Almond Flour
2 Cups Gluten Free Old Fashioned Rolled Oats
1 Cup Dark Brown Sugar, packed
1/2 Cup Granulated Sugar
1 Egg
1 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1 teaspoon Xanthan Gum
1 Generous Pinch of Kosher Salt
1/2 teaspoon Cinnamon
1/4 teaspoon Cloves
2 teaspoons Pure Vanilla Extract
3/4 Cup Dried Cherries
3/4 Cup Dark Belgian Chocolate (Dairy Free), chopped coarsely
Cream the butter and sugars together in a mixer until light and fluffy. Add about half of the flower, the egg, baking powder, baking soda, xanthan gum, salt, cinnamon, cloves, vanilla, cherries, and chocolate. Mix well.
Add the remaining flour and the oatmeal and mix until thoroughly combined.
Drop by rounded Tablespoons onto parchment lined baking sheets and bake for 10 minutes. (I use convection.) Or just until they are golden around the edges.

Such a warm tribute, April, for this remarkable man! He didn’t just marry your Grandmother, he married your family. And he really took those words to heart. All children should be so blessed to have someone like your Grandpa “in their corner.”

What a lovely story. That is so tragic about your biological grandfather. I can’t imagine surviving the war and then surviving a POW camp only to arrive home and be killed in a car accident. That is so very tragic. Your grandmother must have been through so very much during those War and Post-War early years. It is such a blessing that she found a man who not only married her but became a wonderful father to her three children. That man really deserves to be honoured on Father’s Day. xx

Isn’t it amazing? And there are so many other stories. My grandma lived quite the life! Such a strong woman. She passed a couple of years ago at the age of 93! I’m very blessed to have had such good relationships with both of them. I just can’t imagine a childhood without grandparents. 🙂

Oh wow! You’re story gave me chills! How awful for your Grandma to lose her first husband so tragically but what an amazing turn around for her to meet such a wonderful man! I’m so glad you got the father you deserved in your grandpa. He sounds like he was one of the best and you have paid him a wonderful tribute.
Plus those biscuits look delicious! Adding the recipe to my long list of things to do 😀

What a brilliant story. It is fascinating how often our lives cross with others, passing like ships in the night i guess to use that old adage and then REcross.. fantastic that your two grandfathers had that connection so early on. Lovely.. c
