Taking The Stress Out Of Gluten-Free Grain-Free & Dairy-Free Living

These are low in fat, high in fiber, and packed with antioxidants.
A perfect little snack for an hour of reading and a nice cup of tea.
Cherry, Walnut, & Dark Chocolate Bites
1 1/2 Cups Mama’s All Purpose Almond Flour
1/2 Cup Gluten Free Old Fashioned Rolled Oats
1 teaspoon Kosher Salt
1/4 teaspoon Baking Soda
1/4 teaspoon Xanthan Gum
4 Tablespoons Dairy Free Butter
1/2 Cup Packed Dark Brown Sugar
1 Large Egg
1/4 Cup Unsweetened Applesauce
1 teaspoon Pure Vanilla Extract
1/2 Cup Walnut Halves, crumbled
1/2 Cup Dried Cherries
1/2 Cup Dairy Free Dark Belgian Chocolate
Preheat oven to 350 degrees and line two baking sheets with parchment paper. Combine all of the dry ingredients (minus the nuts, cherries, & chocolate) in a medium bowl and whisk together. In a mixer, beat butter and sugar until creamy. Add the egg, applesauce, and vanilla, mix thoroughly.
Slowly add the dry ingredients to the wet mixing on stir setting until just moistened. Add the nuts, cherries, and chocolate and mix on low until thoroughly combined.
Place by heaping teaspoons onto baking sheets and bake for about 12-15 minutes depending on your oven. I use convection.

These sound so good, April. Love the combo of cherries & chocolate. Walnuts are an added bonus. I bet these disappear fast. If not, well, that’s only because you live to far away from me.
I have to admit, April, I just commented on your grilled cheese recipe. When I came here, I had the paralyzing thought that the recipe I just commented upon, the one in which I addressed “April”, couldn’t have been April’s because this post is April’s. Once again, I thought, I’ve confused blogs. (I do this all of the time.) As you know, I was mistaken and the grilled cheese recipe was yours. Finally a mistake I can be proud of! π

Wow.. I’ve just gotten into some gluten-free baking and love the looks of this little treat! It’s the chocolate and cherry combination that I adore (brings back memories of those chocolate dipped cherries I used to buy as a child!). I can’t wait to get home and try some of these! xx Smidge
