Grilled Flank Steak Sandwich with Parlick Fell Cheese, Spinach, And a Cute Little Salad


Grilled Flank Steak Sandwich

2 Slices Gluten Free Bread (I used Udi’s)

Dairy Free Butter (I used Earth Balance Soy Free)

Country Dijon Mustard (I use Grey Poupon)

Trader Joe’s Parlick Fell Sheep’s Milk Cheese from England (Unbelievably good!)

Organic Spinach

Leftover Organic/All Natural Grilled Flank Steak

Butter one side of each slice of bread. Place one slice of bread butter side down in a small skillet. Layer cheese across the bread, top with very thinly sliced grilled flank steak, top with a generous amount of spinach leaves. Spread a generous layer of the mustard on the non-buttered side of the second piece of bread and place it mustard side down on top of the spinach.

Toast on medium-low until bread is golden brown on both sides. I cover mine with a lid for the first side so the cheese will soften and the sandwich will warm all the way through. I remove the lid for cooking the second side of the sandwich as to not build up too much moisture. Soggy sandwich = yuck.

Persian Cucumber, Sugar Plum Tomato, & Basil Salad

1 Organic Persian Cucumber, sliced

About 1/4 cup Sugar Plum Tomatoes

2 Basil Leaves, torn

About 1 1/2 Tablespoons Rice Wine Vinegar

Freshly Ground Pepper

Place all ingredients in a small bowl and toss.

  1. Oooohhh-Nooooo… Now you’ve done it! We’re going to have to make a road trip to Trader Joe’s. In Nashville. Which is almost 90 miles one way… Because we gotta have this sandwich!
    Just kidding, we like to go to Nashville 2 or three times a year anyway, and we’re overdue. While we are there we go to Cheekwood and visit the gardens, and then on the way home we stop in and stock up on all the good GF eats (for me) and other yummy treats for Bob.

  2. Of course that counts! I used to be able to wander out to my organic garden and pull spinach and all kinds of things until my husband and son painted the fence and sprayed paint all over the soil. No longer organic. I was fit to be tied! Now there are flowers growing where my three vegetable gardens used to be.

    My husband just took a job in the New England states. We think we’ll be moving back there (clear across the country!) in September. I’m hoping to work toward having a large organic garden again, and maybe with advice from you and Cecilia, start off with some organic chickens. The company home office is in Tennessee, hopefully there will be some springs or summers where we can explore all of the southern states. Lots of excitement ahead!

    • Sounds like, and I am excited for you! Well, we tried the sandwich and Bob, who never says much about the food he consumes actually said he liked it. In fact, he said he wished he’d had a fatter loaf of bread so his sandwich would have lasted a few more bites. That is a huge endorsement! Me? I loved it too, but next time I will set the meat slicer to slice much thinner! I kept pulling out all the meat out from between my sliced bread. 😉

    • That cheese is SO good, John. Mild and wonderful and not as creamy of a texture as regular sheep’s milk feta style cheese.

      Yes, there’s some exciting things happening in our neck of the woods! And you’re right, this will definitely be a summer to remember. 🙂

  4. All the food looks amazing, why am I not surprised, but most interesting is your upcoming move – so awesome! Congratulations! I am also jealous & will look forward to your planting a new large, organic vegetable garden. I have wanted to do this for some time, but we are currently renting a house and our backyard is in no shape for a veggie garden. Although, we are trying – we are currently in the process of cleaning everything out and I have my heart set on a garden soon!!

    • Thank you! It’s so much fun to have a vegetable garden! So satisfying to watch things grow and be able to feed yourself right out of your backyard. Plus, I’m one of those weirdos that enjoys milling around and gardening all day. 😉
