I’m going to call these “healthy” because they have lots of things that are relatively good for you and only one thing that you could probably live without if you had to. Brown sugar. Not a ton, just enough to add a little sweetness, and I love the molasses flavor it provides.
There seems to be an outright war against sugar these days. But trust me, I won’t go down without a fight.
*Makes about 20 or so snack bites.
Preheat oven to 350 degrees.
2 Cups Gluten Free Old Fashioned Oats
1/2 Cup Sweet Potato Puree (you can make your own, I used organic canned)
1/4 Cup Ground Flax Seed
2 Tablespoons Amaranth Grain
1/3 Cup Sweetened Coconut
1/3 Cup Raw Sliced Almonds
1/3 Cup Walnuts, roughly chopped
1/2 Bar, about 1 1/2 ounces, 70% Dark Chocolate, roughly chopped
3/4 Cup Dried Berries and Cherries, chopped
1 Tablespoon Olive Oil
1/3 Cup Dark Brown Sugar
1 Tablespoon Ground Cinnamon
1 teaspoon Pure Vanilla Extract
Measure all ingredients into a large bowl and mix well until all ingredients are moist and fully incorporated.
Line a baking sheet with muffin papers and fill with about 1 heaping Tablespoon of the oat mixture.
Bake in a preheated oven for about 20 minutes until set and slightly crisp on top.
These look so good the fact that they’re gluten-free is almost inconsequential. “Almost” being the operative word. Look at the ingredients (oats, chocolate, almonds, & coconut). How could they not taste great!
Thank you, John. I ate three of them and then decided I had better put them away! 🙂
I loved your food photography today, these little bites look so pretty and springy! Sigh.. yes, not everything that is “healthy” is low-calorie, but it’s still good for you!!
The dark chocolate is very nice, not too sweet. Just enough to make the craving go away and give a bit of energy. 🙂
Yummm! I have to try these. I say they are all healthy – brown sugar included 🙂
These are stunning and really really pretty! Thank God we don’t have to give up sugar!! c
No kidding! Gluten and dairy are enough! Now my sister in law wants me to take a blood test that checks for cross contaminants in other grains and goat cheese. I’m going to think long and hard about that one…I might end up stuck with just meat and vegetables for the rest of my life.
How beautiful do these look! And I bet they don’t last long – they certainly wouldn’t around here, that’s for sure. I love how you styled them for the photo shoot.
Thank you. That vase with the flower had a pretty bouquet of flowers in it that my hubby got me for Valentine’s day. He said he was hoping to find me something I could reuse and I think it worked out well for this! I ate three the first day, one yesterday, and I’ve managed to stay away from them today. Summer is coming and having a food blog for the past year has given me some chubbiness I’m not sure I’m liking! Ha!
These are so beautiful!
And they look totally healthy for me 😉 Your photographs are stunning too.
Guess what, I invite you to participate in the ABC award. Here’s the link:
Have a nice weekend!
